Jose Manuel Banos Rodriguez, whose background includes a stint at Spain's famed El Bulli restaurant, is the man behind the newly opened Pitiona (named after a local herb) to reflect the flavors of the region. In addition to the dinner menu, there's a six-course tasting option including traditional noodle soup with floating liquid cheese, and lamb with white-bean mousse also paired with a Mezcal tasting.
